French Onion Soup Stuffed Meatloaf

French Onion Soup Stuffed Meatloaf " definitely combines the best of two comfort foods, I made this last night and it's absolutely amazing!!!! There was a battle over who gets the last couple of pieces, and my husband won.
This tasty recipe should be added to your weekly dinner menu!!
- For the meatloaf:
- 2 lbs lean ground beef.
- 2 large eggs,beaten.
- 1/2 cup bread crumbs.
- 2 tbsp minced fresh parsley.
- 8 oz shredded mozzarella cheese.
- 1 tsp salt.
- 1 tsp pepper.
- For the onions:
- 3 onions, thinly sliced.
- 1/4 cup beef broth.
- 1 tbsp olive oil.
- 1 tbsp fresh thyme.
- 1 tsp salt.
- 1 tsp pepper.
- For the sauce :
- 2 cups beef broth.
- 3 tbsp cornstarch.
- salt and pepper to taste.
STEP I: Preheat oven to 350°F.
STEP II:  Combine ground beef, bread crumbs, parsley, pepper, salt, and eggs in a medium bowl.
STEP III: Heat olive oil in a skillet, add onions, salt, and pepper and cook for 12 to 15 minutes. Add thyme and beef broth, sauté for 3 minutes. Set aside.
STEP IV: Press the meat mixture into a rectangle on a piece of plastic wrap, sprinkle the half of the shredded mozzarella, and the cooked onions.
STEP V: Roll up like a jelly roll and place it into a baking pan.
STEP VI: Place pan in the oven and bake for 45 minutes,
STEP VI: Meanwhile, Whisk sauce ingredients and bring to a boil, simmer till the mixture is thick.
STEP VII: Pour the sauce over the meatloaf, and sprinkle with the remaining cheese. Return to oven for 10 more minutes.
STEP VIII: Garnish with fresh parsley if desired, slice, and serve!
