If You Like egg rolls, This is amazing


☞ 1 liter of sunflower oil for frying
☞ 30 g of dehydrated black mushrooms
☞ 100 g of rice vermicelli
☞ 1 large handful of bean sprouts
☞ 500 g of prawns
☞ 2 cloves of garlic
☞ 1 cup onion divided
☞ 2 egg
☞ a pinch  ginger
☞ 1 Rice leaves
☞ 1 Salad
☞ Fresh mint
☞ Spring rolls, soy sauce, viandox, ...

* Preparation:

Soak the rice vermicelli and black mushrooms in cool water
Chop the onion and the 2 cloves of garlic, chop the shrimp
Combine the onion, garlic, shrimp then add the drained crab crumbs. Chop them very fine, with a food processor if possible, and add to the preparation. Add the finely chopped fresh soybeans
Finally, to bind the stuffing, add a beaten egg and salt a little
If you wish, you can also add aromatic herbs directly to the stuffing (coriander, mint, parsley ..)
Soak the rice leaves for a few seconds in cold water with 2 tbsp. tablespoons of sugar or liquid caramel
Roll the spring rolls as in the video below (see tip also)
Fry in 2 batches, it's crispier, in the deep fryer or in a Dutch oven, with 1 liter of sunflower oil at 180 ° C.
First bath: 10 minutes, drain on absorbent paper, then refrigerate once they have cooled, 5 to 10 minutes to have ultra crispy and golden spring rolls.
Serve your spring rolls with beautiful leaves of lettuce and fresh mint, as well as a small homemade sauce: 5 tbsp. soup of nuoc nam (fish sauce) + juice of one lemon + 1 tsp. tablespoon of sugar + 3 tbsp. tablespoon of water.
