POTATO PUFFS



These delicious mashed potato puffs are crispy on the outside and creamy, cheesy and soft on the inside. It's the best recipe for a quick and easy dinner.
To make it, you'll need the following ingredients:
- 4 medium mashed potatoes.
- 2 large eggs.
- 1 cup shredded cheddar cheese.
- 2 tbsp grated Parmesan.
- 2 tbsp chopped parsley.
- salt and pepper to taste.
- 1/2 cup sour cream.

INSTRUCTIONS:
STEP 1 -  Preheat oven to 400℉. And grease with 1 tbsp of butter a nonstick muffin pan. 
STEP 2 - In a bowl, beat the eggs then mix in the sour cream. Add cheddar cheese and parmesan, chopped parsley, and the mashed potatoes. Mix well.
STEP 3 - Spoon the mixture into the pan, filling the cups to slightly below the top.
STEP 4 - Sprinkle more cheddar cheese on top, and bake for 25 to 30 minutes.
STEP 5 - When the sides of the cup are golden brown, remove the pan from the oven and let it cool for 5 minutes before serving.
STEP 6 - Serve it with sour cream or ketchup if desired.
