Baked Garlic Parmesan Chicken And Potatoes





This recipe for Chicken and Potatoes with Parmesan and Garlic Cream is an all-in-one dish, meaning we have both the meat and the side dish in one gratin.

The recipe is very Anglo-Saxon (to be honest, the inspiration is English 😉

* Ingredients for chicken and potatoes with parmesan and garlic cream:

° 4 chicken breasts (you can also use chicken thighs)
° 1 teaspoon of dried basil + 1/2 teaspoon
° 1 teaspoon of dried oregano
° 1 teaspoon of dried rosemary
° 1 teaspoon of dried thyme + 1 teaspoon
° 25 g of butter + 20 g
° 250 g chopped spinach
° 500 g of firm potatoes (for salad, steamed, hash browns)
° salt and pepper
° 4 cloves of garlic
° 2 tablespoons of flour
° 250 ml of chicken broth (more if needed)
° 50 ml of liquid cream
° 80 ml milk
° 50 g grated Parmesan
° Nutmeg
° 2 tablespoons of chopped parsley (optionally)

* Preparation:

Peel the potatoes, wash them and cut them in 2
Put the potatoes in the basket of a pressure cooker and put salted water in the bottom of the casserole dish
The potatoes are cooked after 1z minutes from the whisper of the valve
Preheat the oven to 210 ° C (Th. 7)
Grease a baking dish
In a frying pan or sauté pan, melt the 15 g of butter and sear the chicken, season with salt and pepper and sprinkle with basil, oregano, rosemary and thyme (about 1 teaspoon of each)
Once the chicken is golden, set it aside.
In a saucepan, melt the butter and brown the spinach for 1 to 2 minutes over high heat then set aside
Peel and finely mince the garlic or squeeze it
To prepare the sauce, in another saucepan, melt the remaining 20 g of butter over medium heat
Add the garlic and cook, stirring frequently, 1 to 2 minutes
Pour in the flour and whisk until a light golden color (about 1 minute)
Incorporate as for a white sauce or béchamel, either slowly or all at once the chicken broth which must be cold
Add 1/2 teaspoon of basil and thyme
Let thicken slightly then pour in the milk, crème fraîche and Parmesan
If the mixture is too thick, add more milk as needed
Season with salt, pepper and nutmeg to taste
Place the chicken in the baking dish
Garnish with the potatoes, spinach and distribute the cream
Bake for about 25-30 minutes of cooking
Wash, stalk and chop the parsley
Sprinkle with parsley if you take out of the oven and serve immediately
