Cinnamon bread

Good original bread ideal for the fall and winter months.

* Ingredients:

° 1 tbsp ground cinnamon
° 1 teaspoon of sugar
° 1 teaspoon of salt
° 50 g of butter + a knob for the mold if it is not silicone
° 150 ml milk
° 2 sachet of dry yeast
° 2 eggs
° 500 g flour

* Preparation:

Mix the yeast with the sugar and 200 ml of lukewarm water.
Leave to rest for 15 minutes.
Melt the butter and salt in the lukewarm milk.
Mix in the yeast and cinnamon.
Knead with a mixer fitted with a dough whisk, adding 150g of flour in several batches.
Knead 10 min until the dough is smooth and supple.
Incorporate the eggs one after the other into the dough.
Cover the bowl with a damp cloth and let rise for 1 hour in a warm place (25 ° C) and protected from drafts.
The dough more double into volume .
Place  rest of  flour on a work surface and add the yeast dough .
Knead 10 min.
Put the dough in a buttered rectangular mold and let rise again for 2 hours under the same conditions.
It must double in size.
Preheat the oven to 240 ° C (Th. 8) and cook for 10 min.
Lower the thermostat to 180 ° C (Th. 6) and continue cooking for 30 min.
The summit of bread ought be golden. Turn out to a wire rack.
