The best Cajun Chicken And Broccoli Alfredo


Literally my new fav meal!! I actually made this for my family last night and we loved it. This has become a staple in our house as well as many of my friends.


- Salt
- 1 pound penne or other small pasta
- 2 cups of broccoli florets
- 1 pound of skinless chicken breast cutlets boneless
- 2 to 3 tablespoons of Cajun seasoning (see notes)
- 2 tablespoons of olive oil
- 2 tablespoons of butter
- 3 cloves of minced garlic
- 1/2 cup of dry white wine
- 2 cups of heavy cream
- 2 cups (8 ounces) of shredded Wisconsin parmesan cheese 
- Salt and pepper


1. Make sure to heat oven to 200°F then bring 4 quarts salted water to boil in large pot.

2. Next add pasta and cook for 9 minutes, or until al dente. Then you may drain pasta, reserving cooking water; set pasta aside.

3. Return cooking water to boil. Add broccoli; please boil for 2 minutes, or until just tender and bright green. Then immediately plunge into bowl of ice water and drain; set aside.

4. You'd best, in the meantime, sprinkle both sides of chicken generously with Cajun seasoning.

5. Then heat oil in large skillet until shimmering. Afterwards, arrange chicken in single layer and sauté for about 5 minutes per side, flipping once, until temperature on internal thermometer reaches 155°F. Once done, remove from skillet, cover with foil and transfer to oven to keep warm.

6. Now wipe skillet with paper towel and return to stove. Melt butter and heat over medium-high heat until foaming, then stir in garlic and sauté for 30 seconds, or until fragrant.

7. Whisk in wine and simmer for 2 minutes, or until sauce has reduced by half.

8. Whisk in cream; simmer for 2 minutes, or until slightly thickened and fold in parmesan cheese, then season with salt and pepper.

9. When finished, you may want to add reserved pasta to skillet and toss gently to coat. Arrange broccoli over pasta and top with chicken and garnish with additional parmesan cheese. Serve immediately.


#To make your own Cajun Seasoning: 
All you need to do is combine together 1 tablespoon of garlic powder, 1 tablespoon of Italian seasoning, 1 tablespoon of paprika, 1 tablespoon of salt, 1/2 tablespoon of black pepper, 1/2 tablespoon of cayenne pepper, 1/2 tablespoon of dried thyme and 1/2 tablespoon of onion powder.

#To get a head start: 
You can cook the pasta in advance, refrigerate it and refresh it in hot water just before serving. You can blanch the broccoli and shock in ice water in advance; All you need to do is store in refrigerator in cold water. Yep, the Cajun seasoning can be made anytime.
